How do you make raw zucchini pasta in Australia? This is a common question I get and here I have given you the answer with my own version of our traditional favourite pasta with tomato sauce.
Pasta is one of those foods that those on a raw foods or low carb diet often miss. Fortunately, this raw zucchini pasta recipe makes a vegan version of our traditional spaghetti sauce recipe that some would argue even tastes better than the original!
This is also a delicious, light and healthy meal to serve to guests interested in trying out raw foods for the first time. To make cutting the zucchini noodles as easy as possible, it is best to buy a vegetable spiralizer made especially for such purposes.

If you do not have a zucchini noodles maker then a julienne peeler or even the common potato peeler will do the trick although the zucchini noodles will come out more like strips rather than fun spaghetti.
Try to use Australian tomato varieties such as kumato, grape kumato, cherry tomatoes and solanato, it’s good for our local economy. If you use canned tomatoes buy brands that are grown in Australia.
Raw Zucchini Pasta with Tomato Sauce Recipe
(Adapted for Australia)
6 to 8 firm zucchini – spiralized blade a
1 cup sun-dried tomatoes
2 cups blended fresh Australian tomatoes
2 TBS chopped onion
2 cloves garlic, peeled and diced
2 TBS extra-virgin olive oil
1/2 cup fresh lemon juice
Sea salt, to taste
Optional: Black olive slices, celery slices, chopped avocado, pine nuts and/or arugula, to garnish
1) Make the raw zucchini pasta. Using the spiralizer set on blade A or a julienne peeler. Spiralize long pasta noodles out of the zucchini. If you have the time, prepare the zucchini noodles up to six hours ahead of time and let them sit at room temperature – this sitting period makes them even more pasta like.
2) Make the sauce. With the exception of the garnishes, blend the remaining ingredients together to the desired consistency.
3) Serve! Put the raw zucchini pasta on a plate, then top with sauce and the optional garnishes if using. Enjoy!
Serves 6 hungry people or 8 as a side dish
Alternative ideas for Raw Zucchini Pasta with Tomato Sauce Recipe
1/ If you want to stay raw but want the zucchini pasta warm, then blanch the noodles for a minute in boiling water.
This still keeps most of the nutritional value of raw zucchini’s intact and makes for a very healthy, delicious quick dinner when you are short on time.
2/ If there is leftover raw zucchini pasta then you can store it in the fridge for a few days, when you reuse it there will be accumulated moisture which can be removed by patting dry with paper towels.
Note: raw zucchini pasta does not freeze, when you thaw it out it turns to watery mush.
